We choose the finest and most interesting specialty beans we can find so that we can give our customers a taste experience they will never forget. Our focus is on carrying the highest quality specialty beans, roasting them to release the specific essence of each bean's origin, and providing those beans fresh so that our customers get what they are paying for: coffee that is properly roasted and fresh - not sitting on some shelf waiting to be ordered. Could we sell more coffee if we roasted large batches in advance and stored them in pre-packaged boxes? Probably, but there are plenty of companies doing that already - besides, we choose our beans carefully and pay more for the quality we carry; why would we want to shoot ourselves in the foot by selling you stale coffee after going to all the trouble to put the season's best beans in our inventory?
